  • Plating and presentation and kitchen operations. 
  • Research, plan and evaluate 

Topics may include: 

  • Catering, including functions 
  • Healthy Menu items e.g. Canteen 
  • Trends in hospitality 
  • Café style foods 
  • Street foods 
  • Beverages 

 

Assessment Type 1: Practical Applications (60%)

Assessment Type 2: Group Task (30%)

Assessment Type 3: Investigation (10%)
